BLUEBERRY LEMON MUFFIN RECIPE
6 eggs, overwhelmed
¼ cup apple sauce
½ cup melted coconut oil
1 tsp. vanilla
¼ cup maple syrup
½ cup coconut flour
½ tsp. salt
¼ tsp. baking soda
1 tbsp. lemon zest
½ cup clean blueberries

Directions:

Preheat oven to 350 degrees.

Whisk with each other the eggs, apple sauce, coconut oil, vanilla extract, and maple syrup.

Increase in coconut flour, sea salt, baking soda, and lemon zest and stir till every thing is properly merged. Gently fold in blueberries.

Divide batter into a 12-count muffin tin that is possibly lined with muffin cups or sprayed with cooking spray. Pop in the oven and bake for 35 minutes. Enjoy.

    I know that this video isn't recent, but I'm so glad I found it. I just tried following a normal muffin recipe using coconut flour instead of normal flour and I think it was over 2 cups and they were so so dry, I didn't know coconut flour is absorbent! I can't wait to try your recipe, I had given up on coconut flour until now! Thank you! 🙂

    Hi my husband LOVED your baked chicken recipe and I really love ur recipes too… I’ve been struggling with “soggy insides” of my muffins every time I bake w coconut flour maybe I’m mashing my bananas too much? When I use it to make cookies it turns out amazing but I can’t seem to do it w muffins. Also can I sub lemon zest with lemon juice?
